Geranium do bếp trưởng Rasmus Kofoed điều hành tại thủ đô Copenhagen và lấy cảm hứng từ thiên nhiên, Hãng tin AFP thông tin hôm 19-7.

Nhà hàng của ông Kofoed nhận được ba sao Michelin đầu tiên cho Đan Mạch vào năm 2016. Năm ngoái, danh hiệu nhà hàng tốt nhất thế giới thuộc về Noma, cũng ở Copenhagen.

Vị trí thứ hai năm nay thuộc về nhà hàng Central ở thủ đô Lima của Peru. Các nhà hàng Tây Ban Nha là Disfrutar ở thành phố Barcelona và Diverxo ở thủ đô Madrid lần lượt đứng ở vị trí thứ ba và thứ tư trong bảng xếp hạng 2022.

Lễ công bố giải tại thủ đô London, Anh năm nay cũng xướng tên đầu bếp người Colombia Leonor Espinosa là "Nữ đầu bếp giỏi nhất thế giới", và nhà hàng Leo của cô xếp hạng 48 trong danh sách 50 Nhà hàng tốt nhất thế giới năm 2022.

Năm nay, chỉ có ba nhà hàng Pháp lọt vào danh sách nói trên, tất cả đều ở thủ đô Paris. Nhà hàng Septime ở vị trí 22, Le Clarence xếp thứ 28 và Arpege hạng 31.

Tạp chí Restaurant bắt đầu công bố bảng xếp hạng trên từ năm 2002. Bảng xếp hạng là kết quả bình chọn của 1.080 chuyên gia ẩm thực, bao gồm đầu bếp, nhà báo chuyên về ẩm thực và các chủ nhà hàng gây ấn tượng theo đánh giá của tạp chí này trong 18 tháng trở lại đây.

Wondering what the best restaurants in the world are?

The World's 50 Best released their annual list of the world's top restaurants for 2022 on Tuesday, featuring selections from Italy, Mexico, Peru, Spain, Brazil and Denmark.

Among the countries with top 10 restaurants, Spain is the most represented with three: Asador Etxebarri, DiverXO and Disfrutar.

Mexico landed two entries, Quintonil at No. 9 and Pujol at No. 5, making the latter the best restaurant in North America. The best restaurant in South America is Peru's Central, which landed at No. 2.

But the crème de la crème, according to the list, is in Copenhagen, the capital of Denmark. The restaurant, Geranium, features not only a superb menu, but also panoramic views and a national soccer stadium just next door.

The US clocked in with two restaurants, both in New York City: Atomix at No. 33, and Le Bernardin at No. 44.

10. Le Calandre (Rubano, Italy)

Le Calandre's Massimiliano Alajmo is the youngest chef in the world to have earned three Michelin stars. And he's continuing to do something right, with his restaurant kicking off the top 10.

9. Quintonil (Mexico City, Mexico)

Quintonil has only been around for a decade and is already a top 10 contender, with an expansive menu made from fresh, local ingredients.

8. Lido 84 (Gardone Riviera, Italy)

Menu highlights from Lido 84 include the Torta di Rose, the aubergine parmigiana and the Cacio e Pepe en Vessie, which is rigatoni pasta cooked inside a pig’s bladder.

7. A Casa do Porco (São Paulo, Brazil)

Turns out, dining at a top 10 restaurant doesn't have to break your bank account. The menu at A Casa do Porco includes toasted sandwiches for as little as $3.

6. Asador Etxebarri (Axpe, Spain)

In addition to great food, Asador Etxebarri is also super scenic. The restaurant is located in a rustic, stone building with mountainous views of the Spanish Basque Country.

5. Pujol (Mexico City, Mexico)

Diners can enjoy all kinds of tacos at Pujol, which serves scallop tacos with avocado, ginger and shiso, as well as squash blossom tacos with koshihikari rice and amberjack. Chef Enrique Olvera, the mastermind behind Pujol, is also the owner of over a dozen internationally renowned restaurants including Manta in Los Cabos and Cosme and Atla in New York City. 

4. DiverXO (Madrid, Spain)

The World's 50 Best describes Diverxo as a "wacky wonderland of a restaurant." The tasting menu features Cantonese sea noodles with eel stew, hare Katsu Sando with toasted butter brioche and Galician lobster.

3. Disfrutar (Barcelona, Spain)

Disfrutar's creative menu includes a bun stuffed with caviar and sour cream as well as pesto served with pistachios and eel.

From scallops to goat’s neck, Central serves up all manner of culinary experiences.

This Scandinavian restaurant has a tasting menu that includes 20 different courses served over a minimum of three hours. Talk about bon appétit! 

The World’s 50 Best List, years after having revamped its voting body and rules following criticisms of sexism and favoritism toward Euro-leaning, male-run tasting menu spots — and Copenhagen’s Noma winning all the time — has again elevated an elite Copenhagen tasting menu restaurant to the number one slot.

Geranium by chef Rasmus Kofoed, one of Denmark’s most celebrated culinary establishments, has earned the title of the “World’s Best Restaurant” in the first year that Rene Redzepi’s Noma fell out of eligibility. Noma occupied the top slot in 2010, 2011, 2012, 2014, and 2021: The World’s 50 Best organization instituted a rule change in 2019 that restaurants would not be eligible to win a second time, but Noma still managed one last win after it closed and moved to a new location. Kofoed’s Geranium ranks with Noma as one of Denmark’s two three-Michelin-starred restaurants. Located on the eighth floor of Copenhagen’s national football stadium, it announced last year that it would be dropping its already small quantities of meat on the ~$437 menu to focus on seafood and vegetables.

Central in Lima came in at No. 2, with Disfrutar in Barcelona taking the third slot. The results were announced during a ceremony in London that was hosted by Stanley Tucci. Prior to the ceremony, the World’s 50 Best organization confirmed that restaurants in Russian would not be eligible for the list this year given the country’s attacks on Ukraine. A spokesperson told Eater: “We do not hold any restaurants or bars individually responsible for the actions of their government and we acknowledge all those in Russia who have bravely denounced the actions of their leaders. However, by including Russian restaurants or bars in our high-profile lists, we would be tacitly supporting hospitality-driven tourism to Russia, boosting revenue in the country and indirectly supporting the government through taxation ... As an organization, we do not believe it is right to promote Russia as a dining or drinking destination at this current time.” That change effectively booted 2021 list-makers White Rabbit and Twins Garden off the list.
